To the right of each email address is a “More” button which includes a “Configure email client” option. You’ll find the email server settings in there.

A important note on upgrading WordPress
Wordpress 3.01 has been released, so you’ll probably see the “Upgrade” link on your dashboard. First try upgrading your plugins. If you see a “Fatal error: Allowed memory size of 33554432 bytes exhausted…” notice, any attempted upgrade will fail (and may actually do harm to your site).  Deactivate all plugins before upgrading. After your WP upgrade is done, you can safely re-activate the plugins. You can probably ignore the “Fatal error” warning, but it’s not a bad idea to de-activate your most resource-intensive plugin. The worst offenders are usually the ones which require a lot of database activity like auto-tags, automatic linking of keywords, broken link detectors, and anything to do with Facebook (this last one mystifies me).
